Happy Summer, Hipcooks, our August newletter is here!

    * Hello from Hipcooks San Diego!  We are buildng the beautiful new studio on 30th Street!  Email me back should you wish to join the SD email list so we can invite you to the grand opening bash and give you the class calendar when posted! WHOOP WHOOP! (Start spreading the news...).

    * New classes are posted at Hipcooks EastLA, WestLA,  Portland and Seattle. Blow a summer kiss Goodbye to the last of our summer classes: A Midsummer Night's Dream, Endless Summer Salads & Thrill of the Grill! Also, this is the last of the Summer Coctails class:  Cocktails 3, Get Infused. Last chance to signup!

        * "A Midsummer Night's Dream." Light the candles on the deck, throw some wildflowers in a jam jar and delight your beloveds with this gorgeous summer menu.
              o Salad with buffalo mozzarella, heirloom tomatoes & prosciutto
                Scallop and shrimp Ceviche with mango, basil & jalapeño
                Sweet potato fries
                Ginger amaretto ice cream with sour cherry peach compote


Isnt that a delightful menu?  Here is a recipe from this class:
 
Heart of Summer Fruit Compote
4          fresh peaches, peeled and sliced into wedges
2          bags sweet or sour cherries, pitted
½         cup brown/cane/palm sugar or to taste
½         cup water
½         cup red wine
            pinch of salt
            zest of an organic orange
            dash of vanilla bean paste

Combine fruit, sugar, water, wine and orange zest in a heavy skillet and bring to a simmer over medium heat.  Reduce heat and cook until sauce is thick and syrupy and delicious.  Allow to cool and then chill until ready to serve.  Lovely as a garnish for savory lamb, goat, wild boar, or as a sweet treat on its own or spooned over ice cream.  Full on yum.
